So, as probably all of us know, GPU prices have been skyrocketing for the past months due to crypto-miners. However, I've read -I don't know how true they were- that crypto miners are giving up, but GPUs aren't getting cheaper.
I'm planning on building a new PC this summer, and I don't want to pay $250 for an EVGA GTX 1050 Ti SSC. When do you reckon these prices will fall down? Should I wait for another couple of months?

I'd wait for the next Black Friday sales if you want something brand - new - still a few months of course to go but that would be the best opportunity. Plan B if you need it for the summer is to check second hand products so you can harvest their parts. Or check out EBay.
Well until the crypto-currency is there, you can forget about the GPU unless you want to pay such high price for them since crypto-currency will be keep running.
It is better to buy a laptop than building your own computer, it is cheaper and easier to purchase. Are you trying to play games?
