Wordpress had Gutenberg as a plugin for a while and it with 2/5 stars in reviews. Wordpress should have get the idea there. Anyway there is a simple plugin called Disable Gutenberg which Block he new editor and restore the Classic Editor and original Edit Post screen. 260 people rated for it and has 5/5 so I can people like it very much.
As for word count. I use to plugin to get all content word starts in a one place since its important to me.
